There is something magical about the concept of donuts with bacon. I think it is because I am combining a dessert with meat…something you don’t see that often.

Since I tried Psycho Donuts’ wacky gluten free maple bacon donuts, I have been obsessed with bacon and maple. Our family fell in love with these donut shop donuts! If you haven’t tried maple bacon donuts, I encourage you to try this recipe!

They are delicious, like my Gluten Free Banana Chunky Monkey Donuts, but this new donut recipe has that saltiness from bacon that is hard to beat!

Why these gluten free maple donuts are great:

  • They are baked, so they have way less fat than a fried donut.
  • You have the flexibility of making them in a donut maker or baking them in a donut pan.
  • They have almond flour, so there is some protein to balance out the sugars.

These homemade maple bacon donuts are gluten-free, dairy-free, soy-free, and oat-free.

  • Gluten free flour – I used Pamela’s Baking Mix because it is something I had on hand. You can use other gluten free flour blends in this recipe.
  • Almond Flour – I love Anthony’s brand almond flour, but there are lots of good brands. Just be sure to use almond flour and not almond meal.
  • Coconut sugar – You can also use brown sugar if you prefer.
  • Non-dairy milk – I used almond milk, but other dairy-free kinds of milk will work. I do not recommend canned coconut milk.
  • Coconut oil – You can use butter or vegan butter instead.

Step-By-Step Photos and Directions:

Step 1: In a large bowl, add your dry ingredients and whisk to blend.

Step 2: Combine the wet ingredients in a smaller bowl and whisk to blend. Then, pour the wet ingredients into the dry ingredients and mix.

I really love my Babycakes Donut Maker. It is so easy to use and even easier to clean. I use it a couple of times a month because my kids love donuts. (Note: Babycakes has changed the design of their donut maker, and the new one is square-shaped.)

Step 3: This photo shows what the gluten free maple donut batter looks like before cooking the donuts. It is a little thick, but the mini donuts are still light and fluffy!

Add the donut batter to your donut maker or to a greased donut pan if you are baking these.

Step 4: Your doughnuts will look golden when they are all finished. Use the special fork with the donut maker to remove the donuts. These gluten free donuts are hot!

Step 5: Mix the maple glaze and pour over the cooled donuts. Sprinkle cooked chopped bacon on top.

TIP: place wax paper under the rack before you pour on the maple glaze. It will save you a lot of cleanups!  Add the chopped bacon and allow the glaze to harden.

Do you have to refrigerate bacon donuts?

Yes, you need to store these bacon donuts in the refrigerator.

Is bacon gluten free?

The short answer is yes, but I will always tell you to read the label!! I often find gluten hidden in the strangest things. I used Trader Joe’s pre-cooked bacon for this recipe, but feel free to use any cooked.

Can you bake these donuts in the oven?

You can also bake these donuts in a donut pan. (If you use a donut pan, consider spraying coconut oil so the edges get a little crispy like a fried donut.)

How long will maple bacon donuts keep fresh?

These donuts will keep fresh for up to 3 days in an airtight container or up to 4 months in the freezer.

Can you freeze donuts?

You can easily freeze these donuts. Put them in a freezer-safe zipper-style bag and squeeze out the extra air. Seal the bag and place it in the freezer.

Ingredients
  

For Donuts

  • 1 ยฝ cups Pamela’s Products Ultimate Baking Pancake Mix
  • ยฝ cup almond flour
  • ยฝ cup coconut sugar
  • ยผ teaspoon ground nutmeg
  • ยฝ teaspoon ground cinnamon
  • Dash of salt
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • ยพ cup almond milk
  • 2 tablespoons melted coconut oil

For Toppings

  • ยพ cup powdered sugar
  • 3 tablespoons maple syrup
  • 1 tablespoon warm water
  • 4 slices bacon cooked and chopped up into small pieces

Instructions
 

For Donuts

  • Plug in Babycakes Mini Donut Maker to preheat.
  • Mix all dry ingredients including coconut sugar in a large mixing bowl. Whisk to blend.
  • In a small bowl, add all wet ingredients and mix.
  • Pour the wet ingredients into the dry ingredients and mix to blend.
  • Open the donut maker and lightly spray with coconut oil.
  • Using a spoon, spoon batter into each donut section (see photo below.)
  • Cook for 3-4 minutes until the mini donuts are golden.
  • Remove donuts onto cooling rack and continue to make donuts until you run out of batter.

For Topping

  • In a small bowl, mix powdered sugar, maple syrup, and water.
  • Stir until blended.
  • Drizzle glaze onto each donut.
  • Sprinkle tops with chopped bacon.

Notes

  1. You can bake these donuts in the oven in a donut pan, or use a donut maker, which makes the outside a bit crisp like a real donut.
  2. To bake them in a donut pan, preheat the oven to 350ยบ F. Add the donut batter to a greased donut pan. Bake for 18-20 minutes. Remove the donuts to a cooling rack. Top them the same as the donut maker ingredients.
  3. Store the leftover donuts in an airtight container. They will keep fresh for up to 3 days. They also freeze well.

Please know that every gluten free flour blend has a different starch to grain ratio. If you use a blend I didn’t test, you may need to adjust your moisture levels in your baked goods.

  1. I was just wondering if your recipe is really dairy free like you say in your prologue. I was looking at the ingredient list for Pamala’s pancake gluten free baking mix and it supposedly has buttermilk in it….not dairy free if this is true??? Wondering if there is something else that I could use instead so it will be dairy free.

    1. Hi Jennifer, I wrote that recipe back in 2014, and it makes me wonder if the company changed its ingredients when they rebranded with new packaging? Thank you so much for letting me know. I sent the company an email to ask and took out the dairy free wording until I hear back from them.

    1. Hi Donna, You can definitely bake these donuts. The time in the oven will depend on size of donuts and how much batter you put into the mold. I would definitely check them in 10-12 minutes, but it may not be ready yet. Thank you for your note :-).
